Except the Gambier and Marquesas Islands, all of French Polynesia is in the same time zone, UTC-10. Since Paris is in the UTC+1 time zone, the time difference between mainland France and Tahiti is 11 hours.

Business hours:

In French Polynesia, banks and administrative offices close at 4.30pm (local time) on weekdays (2.30pm on Fridays). The post office is open on Saturdays and public holidays from 8am to 10am. Most supermarkets and grocery stores are open all weekend, except Sunday afternoon.
